First, to make tandoori chicken masala, you'll need the following ingredients:

  • One tablespoon of ground coriander.
  • One tablespoon of ground cumin.
  • Half a tablespoon of turmeric.
  • One tablespoon of garam masala.
  • Half a tablespoon of sweet paprika.
  • A quarter tablespoon of ground cayenne pepper or 1 whole cayenne pepper.
  • A quarter tablespoon of ground cinnamon.
  • A quarter tablespoon of ground cloves.
  • A quarter tablespoon of ground nutmeg.
  • One onion.
  • One piece of peeled ginger.
  • Three garlic cloves.
  • The juice of one lemon.
  • A quarter cup of olive oil.
  • 240 grams of natural yogurt.
  • Salt to taste.
  • 1.5 kilos of boneless, skinless chicken thighs.

To make this recipe, the first thing you need to do is add and mix all the spices in a bowl until well blended, letting them sit as long as possible to enhance the flavors. Then, blend the chopped onion, ginger, garlic, lemon juice, and oil until everything is combined. At the same time, in another bowl, add the yogurt, salt, and spices and mix them with the paste made in the blender.

Next, add salt to the chicken, combine it with the previous mixture, and stir well so that it is completely coated. Then, cover it with plastic wrap and refrigerate it for about 24 hours to enhance the flavor. When you're ready to cook it, preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and place the chicken on a large baking sheet. Let it bake for about 30 minutes, then turn on the grill to a low temperature. Finally, wait for it to brown. When the chicken is golden brown, you can remove it and serve it as a simple and delicious dish. You'll lick your fingers!
